For this months newsletter I will be offering something a little different. Since I started training to become a health coach, I have been experimenting a lot more in the kitchen with flavours and combinations. I love it. There is something so satisfying about have cooked something beautifully nourishing for yourself. Something creative and intuitive about allowing your body to stir up what it fancies in the moment. Cooking good food with quality ingredients for yourself and those you care about from scratch is definitely a form of self love. Tantra says that this physical body is your temple to the divine in this life time, and I make them right. So this month, I will be offering a recipe. Something simple, quick and easy with seasonal ingredients that will hopefully inspire you to grab an apron more often. You will have to excuse my measurements, as I am by no means a chef. I just love good food and do most of my cooking by sight and taste alone. I think it’s more fun that way anyway. You then get a dish every time that is totally attuned to your pallet. This warm salad makes a delicious light lunch, or as something a little more interesting than your usual side salad.
Warm Kale, Apple and Pecan Salad. Serves 2.
1 Apple, diced
2 handfuls of pecan nuts, halved
Half a bag of kale
2 cloves of garlic, roughly chopped (or if you aren’t a fan of big chunks of garlic, which I LOVE, then dice a little finer)
Olive oil
Tenderstem Broccoli
For the dressing
1 tbsp tahini
A good glug of olive oil
Big pinch of sea salt
Juice of half a lemon
Method:
Make the dressing by adding all ingredients together in a bowl and giving it a good whisk. You can then leave it so the flavours mingle whilst cooking off the other ingredients. Adding lemon to this dressing increases the absorption and bioavailability of the plant based iron in the kale. Gosh, I bloody love plants.
Saute the kale and garlic together in a pan with a little olive oil. Whilst the kale is softening, place the broccoli on a baking sheet with olive oil and salt and bung it in the oven, until just crispy. In a dry saucepan, toast the pecan nuts so you can begin to smell the oils releasing.
Plate the salad with the kale and garlic as a base, draping the broccoli over the leaves or to the side. Sprinkle with diced apple and the toasted pecans. Be generous with the tahini dressing.
This month at Compassionate Awakened Living, we round off one block of classes and kick off a new one! New dates for the next 6 week block of classes are week commencing February 28th – week commencing April 4th, which applies to both the 6 week beginners course and the All Levels class. I am also teaching privately if you prefer learning in a one on one setting. Private learning also gives you the space to go deeper into the specifics of your body and be lead a little more by how you feel on the day. It is a beautiful leap into more intuitive yoga. This will be an exploration into one area of yoga philosophy, giving you tools and techniques to apply this ancient wisdom into a modern life. Priority booking goes to those who have previously attended, however if you would like to be added to the waiting list then please do not hesitate to reach out as spaces do sometimes come available.
Lastly (and I can’t believe I’m saying this), next month I graduate as AN INTEGRATIVE NUTRITION HEALTH COACH. Oh my goodness. After a year of studying, diving deeper into myself and gaining the tools to help support others, I will be ready to coach very soon. I don’t think I have ever been so passionate in supporting a community as I have been now. Next months newsletter will be an exploration into WHO I will be offering coaching to and WHAT it is that I offer. If this is something you are excited about too, then stay tuned.
