Summer is upon us. Warmer days, longer evenings and lighter, fresher food are all things I begin to look forward to. Although, my body seems to find raw salads too cold and a little unsatisfying. If you are like me and prefer to eat cooked food, then this simple warm salad recipe could be for you. Packed full of greens and toasted hazelnuts for a slight crunch, this could be a beautiful side dish as well as the main event for a light lunch.
Warm Spring Greens, Pea and Hazelnut Salad with Tahini Dressing
4 Big Spring Green Leaves, sliced
1 White Onion, chopped
1 cup of Peas or Petit Pois (frozen are incredibly handy)
Handful of Hazelnuts
Handful Sunflower Seeds
1 tbsp Tahini
Juice of half a Lemon
Good glug of Olive Oil
Pinch of Salt
- Mix the tahini, salt, lemon juice and olive oil together in a bowl and set to one side.
- Soften the onion and spring greens in a frying pan with a little olive oil until the onions are translucent.
- Add the petit pois into the frying pan and cook so they have a little bite.
- In a dry frying pan, lightly toast the hazelnuts and seeds until you begin to smell the aroma of the oil from the nuts.
- Plate up your salad, and top with the dressing and toasted nuts/seeds. I have served mine with a jacket potato in the photo!
This month we have the last 6 week block of Yoga classes at Saints Green Place before a Summer break (beginning week commencing 20th June). I am delighted to announce that upon return from holiday in September I will be adding a Thursday evening class at The Old Joinery Studio in Colchester to my timetable. This is a beautiful studio much like Saints Green that backs onto the fields surrounding Colchester, complete with Yoga mats and blocks. I will be adding this very shortly. Two events are being held this month at Compassionate Awakened Living – the first being the next ‘Awaken Your Life’ Yoga In Action Workshop on Sunday 26th June from 12.30PM-3.00PM. This is a beautiful deep dive look at a specific area of Yogic philosophy through the lens of Asana (an hour Vinyasa flow practice) and philosophy (an hour philosophy discussion), with homemade vegan snacks and tea to refresh yourself in between. The second is the next Moon Bath (for the New Moon in Cancer), being held on Thursday 30th June from 7.00PM-9.00PM. Two hours of nourishing Yoga, Meditation and gong sound therapy to align your energy with that of the particular lunation. These events are wonderful to do with friends and loved ones alike. Both events are £30 per person and are held at Saints Green Place Yoga Studio.
