Newsletter – April 2022

This month’s newsletter we are back with another recipe, one fit for an Easter breakfast. Breakfast is my favourite meal of the day. I really love having a slow, lazy breakfast. Cooking something pretty and bright for myself that is also delicious and so good for me makes me feel so accomplished before the day has even started. Picture sitting outside in the sun, birds singing surrounded by nature with a cafetiere and a stack of sunshine pancakes.  What could be better?

Sunshine pancakes – makes enough for a stack of 3

1 cup of buckwheat flour

1 tsp Turmeric

1 egg

Glug of your favourite milk alternative

1 top coconut oil

Honey (local or organic is best) or agave syrup

Chia seeds

Milled Linseed

Your favourite nut butter

Selection of your favourite fruit- I used banana, apple and kiwi

1) In a food processor or nutribullet, blitz the buckwheat flour, Turmeric, egg and milk till it reaches a smooth, runny consistency. It should only take about 10 seconds.

2) Melt the coconut oil over the heat in a frying pan. Pour a blob of batter into the pan. If you need to use a spoon to spread the mix out into a circle then do so. When one side of the pancake is golden brown and comes off of the pan, flip and cook on the other side. Repeat until all of the batter is used up.

3) Now its time to dress your plate! Stack the pancakes and sprinkle over the chin and Linseed. Chop your fruit and arrange it on the plate. Add a big blob of peanut butter or your alternative and then drizzle the whole thing with honey.

And there you have it! Sunshine pancakes, with an anti inflammatory kick from the Turmeric. If you have a sweet tooth this is a great one to start the day with, as you can still get a sweetness but from non refined sugars.

As we head into April, the incredibly popular Moon Baths return, with our next falling on Wednesday April 13th from 7PM, for the Full Moon in Libra. A moon bath is a fabulous way to align your energy with the New and Full Moon and find your flow with the rhythm of nature, using yoga, meditation and gong therapy.
